The wine region Cariñena Designation of Origin is the largest in area and the oldest of Aragon. It is located 50 kilometers from Zaragoza, south of the Ebro River in the so-called Campo de Carignan, bordered on the south by the Sierra Virgin and west to the wine region Calatayud. This is one of the oldest in Spain, founded in 1932, with a winemaking tradition that dates back to the third century BC, in the region celtíbera Carae where elaborated some kind of alcoholic beverage (probably mead); and during the Middle Ages, which flourished under the protection of monasteries. Carignan has given its name to the grape variety of the same name, also called Mazuelo in northern Spain and Carignan in France. In addition to the Carignan, grape varieties are grown Grenache, to produce red and rose wines, the Viura for white wines and Tempranillo for red Foster. In the vinification of the wines used a complete and if the young wines of carbonic maceration malolactic fermentation.

They are typical of the area called vintage wines, which are subjected to a minimum aging period of 24 months in an oak container or bottle.

  • -The Oak wines have remained in oak container more than 45 days in the case of whites and 90 days in the red wines period. And Noble wines are subjected to a minimum aging period of 18 months in total, in oak container or bottle. In the maturing and aging of their wines, use the following parameters and times:
  • -Crianza, For red wines aging period of 24 months, of which at least 6 have been in oak barrels of maximum capacity of 330 liters; and white and pink 18 months, with a minimum of 6 in oak barrels of the same maximum capacity.
  • -Booking, For red wines a minimum aging period of 36 months, of which at least 12 in oak barrels of maximum capacity of 330 liters; and white and pink 24 months, of which at least 6 in oak barrels of the same maximum capacity.
  • -Great Reserve red wines for a minimum period of aging of 60 months, of which at least 18 in oak barrels of maximum capacity of 330 liters; and white and pink 48 months, of which at least 6 in oak barrels of the same maximum capacity.
