Located in Catalonia, takes its name from the Penedès region, with 47 municipalities south of Barcelona and 16 in the province of Tarragona. The regulatory council was founded in 1960 but its origins date back to Roman times. From the eleventh century the vineyards were extended inward and began to export wine from nearby ports and, since 1865, also by rail. The vineyard covers an area of over 27,000 ha in three areas whose altitude ranges from the coast to 800 m of altitude:     Upper Penedès, near the mountain with soils rich in phosphorus and low in potassium.     Penedès Sea, along the coast, with sandy soil.     Central Penedès, between the two areas, sandy soil and the highest in chalky soil and clay. Cultivate a wide range of grape varieties. The traditional white grape, which are used for the production of cava: Xarel.lo, Macabeo, Parellada, Malvasia with other international, that have been introduced, such as Chardonnay, Riesling, Sauvignon Blanc, Muscat and Chenin Blanc Frontignan. And grapes: Carignan, Cabernet Sauvignon, Tempranillo, Grenache, Merlot and Mourvèdre . Traditionally it has been developed mainly champagne and white wines from indigenous varieties and French, as Xarello and Chardonnay. In recent years has increased the red winemaking based blend of grapes such as Tempranillo, Garnacha and Cabernet Sauvignon. And sweet wine with Muscat and Malvasia, using the traditional method of oxidation. It has been the designation of origin research pioneer, being the first region in Spain to use stainless steel equipment and cold fermentation and cultivating organic vineyards. In recent years he has devoted resources to the recovery of local varieties to develop organic farming techniques and experiment with new forms of development with barrels.
