It is a newly established wine region, has to produce wine since 1985. In extremely cold weather, growers cover the vines with soil during the winter to protect them from the cold, and hand-dug spring. Region is less favorable for viticulture. Since the early 90s the ice cider made with the same technique used for ice wine. Ice cider is obtained by the alcoholic fermentation of the juice of pressed apples or juice frozen ice cream, natural cold, with a high concentration of sugars to leave on mature apples on the tree. There are two methods for processing:     The cryoextraction: Once frost apples harvested in January or February, when the temperatures reach 15 degrees below zero, are pressed and the juice is allowed to ferment for about eight months at low temperatures.     The cryoconcentration: apples are harvested in late autumn, preserved and pressed cold in late December. The juice that is left outside for about six weeks, which is freezing and acquires a high concentration of sugars. Then water is removed and fermented six or seven months.
