Cafayate is a town located north of Argentina, in the province of Salta, between the Valleys Calchaquies. Its vineyards are considered the highest in the world, at 1,700 m altitude, in a dry climate, cold nights and warm sunny days, deep soil, low humidity and poor in organic matter. The vine has its antecedents in Salta from 1556, when it was introduced through Chile by conquistadors and missionaries, and received a further boost with French grape varieties brought by D. Wenceslas Square to his farm in the district Perseverance Animaná and D. Sigifredo Brachieri in Cafayate, from 1886. They grow mainly Torrontés grape variety in its three types: Mendoza, San Juan and La Rioja, the only grape originated Creole grown América.También other less as Cabernet, Chardonnay and Malbec. They produce red, rosé and white well-structured, full-bodied in intense aromas.
