Santa is a red wine made by Castaño wineries from grapes with low yields (between 1500 and 2000 kilos per hectare) Monastrell grape varieties (90%) and Garnacha (10%), grown in the Yecla appellation (Murcia). The winery has a vineyard over 45 years old, located at an altitude of 750 meters, facing south, on stony and sandy soils of limestone base. The strains are treated by short pruning with cupping. In the elaboration of the Santa wine, after the harvest After being harvested, the clusters of Monastrell and Garnacha ferment at a controlled temperature of between 26ºC and 28ºC, over 16 days. Then, after the malolactic fermentation, the wine ages for 10 months in French and American oak barrels, until bottled.
