Bobos Finca Casa La Borracha mono-varietal red wine, from the Utiel Requena designation of origin, made with Bobal grapes from old vines, of low yield, of 70 years of age, grown in the Finca Casa La Borracha, the oldest plot of Bobal who has the cellar. In the elaboration of Bobos Finca Casa La Borracha wine grapes are selected from the best vines, which is collected in very small boxes, about 15 kilos. The harvest is done only in the morning, so that the grapes reach the cellar at a low temperature. Upon reaching the warehouse, the boxes of Bobal are placed in a cold room at -10ºC, for 3 days, and when they are removed, the clusters of each box are selected per box. After de-stemming it goes to new American oak barrels of 400 liters, refrigerated, and macerated in cold at 8ºC for 4 days, sinking daily the hat, barrel by barrel, manually. When the fermentation begins, the barrels are left to cool so that the temperature reaches 26º of temperature. After 15 days, it is passed through a pneumatic press and the resulting must ages for at least 10 months in new Allier French oak barrels and is bottled after a light filtering.
The name of this wine Bobos Finca Casa La Borracha is at least curious, Bobos in a wine does not mean that it is for someone bobo, idiot, or without malice, those are not terms for a wine: In this case Bobos is a synonymy, the name that they give to the variety Bobal, but being a wine from a different Bobal, they have wanted to call him Bobos instead of Bobal, giving him at the same time a touch of humor, which gives what to think ... although La Borracha is only in name of the plot.
