Ximenez-Spinola Exceptional Harvest is a white wine made from grapes Jerez Pedro Ximenez in a exceptionnaly good vintage. The grapes are allowed to ripen on the vine for the alcoholic strength and perfect sweetness, then rests on its lees for two months, with continuous, smooth battonages in American oak barrels that previously have been soaked in wine with other wines oxidative aging cellar in selected screeds boots 1918 (Pedro Ximenez raisins) and 1964 (Pedro Ximenez oxidative aging) according to the quality of the winery. Boots selected both screeds are assembled one year before being bottled in a proportion that is widely prevalent oxidative aging, but in which widely prevails oxidative aging, but where the edges of oak are rounded for wine raisins, following criteria tasting.
