Pazo Pondal Albariño is a wine from the Premiun range of the winery, a monovarietal white wine from the Albariño grape, from the family's oldest and lowest altitude vineyards, located on the Leira Longa plot, in the County of Tea, very close to the Miño River , in ecological cultivation since 2015. The planting of these strains is in trellis, obtaining better aeration of the clusters and protection from the direct rays of the sun. Gradual harvest, which begins the third week of September, and is developed prioritizing the plots that are at the optimum point of maturity, until the end of September. In the vinification of Pazo Pondal Albariño, the selected grape makes a cold film maceration, to obtain a greater extraction of the aromas of the skin; then it is destemmed and subjected to a soft and slow squeezing, to obtain the flower must. The racking of the musts is done at low temperatures, then fermented at controlled temperature in French oak barrels, on their own lees, for a minimum of 6 months, performing weekly batonage to keep the lees in suspension. In the wine tasting, this Albariño offers a very aromatic explosion of citrus and balsamic notes, with mineral memories; in the mouth it is unctuous, glyceric and balanced. The low altitude at which it is located in the vineyard gives the wine a lower acidity and a higher concentration.
