La Grande Chatelaine wine is a Burgundy white wine obtained from a plot of 40 years, on the south / southeast slope of the Beaune mountain, planted on soils of limestone clay composition, mainly limestone. Yields from 35 to 40 hectoliters per hectare. The harvest is late, and the grapes are harvested by hand, in baskets of 25 kilos, with selection of bunches on the selection table when arriving at the winery. The winemaking of La Grande Chatelaine wine is made in Burgundy barrels; the whole grapes receive a soft pressing, in pneumatic press, with light decantation. Next the must goes to barrels 15% of them of new oak, with long fermentations, that extend throughout 3 to 8 months, and aging in the same barricias, with its lees of 12 to 15 months without stirring. Bottled after the second winter, after a very light filtering.
